Gebakken Kaasplak

The other day, I was rummaging around in stacks of 1950's women's magazines looking for dinner ideas, as I often do. I love to see what dishes the men and women of my mom's and grandma's time prepared and ate. Sunday meals were certainly more elaborate as they appear to be nowadays, I would say, starting with a soup, then a main course (potatoes, meat and vegetables), and ending with a (dairy) dessert. Whatever was left of the meat, was frequently served the next day sliced for lunch, cold, with bread and pickles, or transformed into a new dish, often a casserole, or hot snacks like kroketten. Rice or elbow macaroni was cooked once, and a portion kept aside to turn into desserts for the next day, and vegetables that were left went into the soup, stamppots, or pan-fried until crispy. Nothing was wasted! 

On days that meat was not on the menu, I frequently saw something else in its stead: gebakken kaasplak, fried cheese slice. Recipes among the different magazines varied a little bit, so I ended up creating my own. I think it's my new favorite! 

It's a simple yet delicious dish made by breading a thick slice of cheese and frying it in butter until it's golden and crispy on the outside while remaining soft and melty inside. Pick your favorite cheese, and go for it! You can serve it as a meat substitute with dinner, as a hamburger substitute on a roll with fresh lettuce, tomato, pickles and onion, or as a snack with a dollop of mustard. 

Here in the US, cheese can be found pre-sliced, so-called deli-style. Each square is approximately 3.5 x 3.5 inches (8.5 x 8.5 cm), and weighs about 1 oz /28 grams each. Do not use floppy American cheese slices for this, but select sturdy Sharp Cheddar, Aged Gouda, or Pepper Jack slices.

2 eggs
1 cup panko or breadcrumbs
4 tablespoons (55 grams) butter
Whole grain mustard

Lay out the cheese slices. Spread a teaspoon each of mustard on four slices and top each with a second slice. Beat the two eggs in a shallow dish. and pour the breadcrumbs in another shallow dish. 

Dip one of the stacked cheese slices in the egg, turn it over to coat the other side, and lift it out of the egg. Let it drip, and then coat the cheese with breadcrumbs on all six sides. Repeat with the rest of the cheese. 

Heat the butter in a frying pan. Dip the breaded cheese in the egg again, then again in the breadcrumbs and put them in the frying pan, repeating until all four cheese patties are in the pan. On medium heat, fry all sides of the cheese patties until golden brown, about five minutes. Serve warm.





Vijfschaft


 As you can imagine, I do a lot of reading. Cookbooks, history books, and anything else that can help me dig deeper into our Dutch food culture and our traditions. And very often I can find background information that helps me place a dish in a certain province or timeline. But the information for today's dish, Vijfschaft, eludes me. For one, there are as many variations as there are recipes. The only constant is the main ingredients: potatoes, carrots, onion, apple, beans. Secondly, it is said to be a typical dish from Utrecht...but I can't find the source. I've gone back as far as 1769 but there is no mention. Every recipe intro says the same thing: the name is unknown, it is eaten during the time of year when there was not much left of the foods stored over the winter, it was eaten during the time that there was not much farming to be done (i.e. winter), and the name "vijf" (five) either refers to the five main ingredients or dinner time, and the word "schaft" (worker's meal break) indicates the worker nature of the dish.

I can see why this dish would be suitable for workers: it is loaded with carbs which provide plenty of energy. The ingredients are also easily found and prepared: apples, onions, potatoes, and carrots are ingredients for many a stamppot, and brown beans are the main ingredient for a delicious soup. 

Because I can't really vouch for the recipe's origin, background, regional impact, or significance, there is a good side: we can make the recipe our own, and nobody can tell us we're doing it wrong :-)  The premise of the dish is that the five cooked ingredients are added to a deep bowl or dish, seasoned with salt and pepper. The two main variations seem to be that you can: 

- boil all the ingredients in bouillon or water.

- fry the onions and the apples in butter, boil the potatoes, beans, and carrots. 

From here on out, it's a free for all. You can mash the boiled ingredients roughly, with a bit of butter and some of the cooking liquid, warm milk, or appelmoes and eat it like a coarse stamppot. You can leave the vegetables whole and serve it with the cooking liquid (more like a stew), or thicken the cooking liquid and season it with mustard and pour it over before mixing it in. Or you can serve it with a dollop of butter or mayonnaise. You can also add rookworst, smoked sausage, and/or bacon. See what I mean? Many variations of the same dish - so it's all up to what you prefer! As for me, I like it two ways: either hot, with smoked sausage, with a mustard sauce, or cold the next day, chopped up and mixed with mayo, more like a potato salad. Below is the recipe for the hot dish. Serves 4. 

Utrechtse Vijfschaft

4 medium-sized potatoes, peeled and quartered

1 vegetable bouillon cube

1 large carrot, peeled and sliced

1 small can brown or red kidney beans (approx.8 oz/ 250 grams), drained and rinsed

1 smoked rope sausage

1 large onion

1 large apple

2 tablespoons (30 grams) butter

2 tablespoons mustard

1 tablespoon cornstarch

Salt, black pepper

Bring the potatoes to a boil in enough water to cover, with the bouillon cube for about 10 minutes. Turn to simmer, and add the carrots, the rinsed beans, and the smoked sausage and slow boil for 10 minutes more. Check to see if the potatoes are done, then drain, but reserve a cup (250 ml) of the cooking water. 

In the meantime, peel and slice the onion in rings, core the apple, and slice into 8 slices. Melt the butter in a skillet and brown the onions, for about ten minutes on low-medium heat. Add the apple slices and fry them brown on each side, for about five minutes. Turn off the heat and set it aside. 

Mix the cornstarch with a tablespoon of cold water. Bring the cooking water to a boil, mix in the cornstarch slurry and stir until it thickens, about a minute. Turn down the heat and stir in the mustard. Taste to see if you'd like a stronger mustard taste, if so add another tablespoon. 

Mix the potatoes, carrots, beans, fried onions, and apple in a large bowl. Taste and see if you need to adjust the salt. Sprinkle freshly ground black pepper over the dish. Serve the warm mustard sauce on the side, together with the sliced sausage. 






 

We are seen here, here and here....but not here!

The annual Saveur Best Food Blog Awards came and went, and I'm sad to say that we've gone another year without even a single mention! Well, sad....not really. I would love to see more exposure to our national cuisine, with all its history, quirks, oddities and influences. But I am not a super duper food photographer, I'm not an exceptional food writer, and I lack the technical skills to turn the website into an amazingly designed online miracle.

But that's really not what it's all about, is it? If I can write the recipe down, show you how it's made and what it's supposed to look like when it shows up at the table, and give you a bit of history as to why or how we cook certain dishes, we're doing pretty good! I hope it encourages you to try and make some things yourself, perhaps reminisce a bit with some of the stories, and trust that you will share this with your children, your family and a good friend or two.

- In the meantime, I am tickled pink to see that The Dutch Table's recipes and photographs showed up on the I Am Expat website, in Benjamin Gartska's article about Dutch Easter Brunch.

- Also, the news section of the website for Dutchies, a restaurant in Hermanus, South Africa, was so kind as to publish some of our pictures.

- And I loved seeing our Dutch mustard soup on the BuzzFeed's list of 15 Deliciously Spicy Dishes From Around The World!

This is what makes me happy! Real people, real interests: and as time progresses I'll continue to capture our food history online: with recipes, pictures and anecdotes. I've been doing this for four years, and I have at least four more years of material, and that's just off the top of my head.

A Dutch dinner party!

I love three day weekends! It gives me a little bit more time to do something extra: I sleep in a little bit longer, I pull out a recipe of two I've been wanting to try, or I kick back with a book or a magazine. But the best thing about three day weekends is that it gives me one more evening to plan something to cook. And a Dutch dinner party sounds just like the ticket!!



How about we start with an appetizer while the guests arrive? Maybe some bitterballen and diced Gouda cheese on a platter (with good mustard of course!) while we visit over a glass of something or other. It's a great time to relax, share the latest news, or make plans for a weekend away together.



When people are finally seated, start with a witlofsalade, or a light soup such as groentensoep met balletjes. That's easy enough. But now comes the hard part! What vegetable are you going to serve? Boerenkool met worst is wonderful but perhaps a bit too casual? How about a traditional gehaktbal met jus, cauliflower, and cute little boiled potatoes? Or hachee with mashed potatoes and rode kool met appeltjes? And don't forget those delectable slavinken!




Finish your dinner with hangop or vla, whether it's hopjes or vanillevla. And how about an appelbol, or kersenvlaai with your 8pm coffee to round off the evening. Sounds like a splendid time!

Mosterdsoep

It is so cold outside! It's snowing and these dark days before Christmas sure makes me just want to curl up on the couch, grab a good book and hide from the elements. But no such luck! I need to head out in this weather to get some last-minute groceries, the Sunday  newspaper and maybe a stocking stuffer or two. Sinterklaas has come and gone, now it's time for the Kerstman!
With all the eating, baking, sampling and tasting that is going on these days in this household, there is very little need for a full meal. But a quick pick-me-up cup of soup during this time really hits the spot.
Today, I made a quick mosterdsoep, a mustard soup. A variety of regions in The Netherlands produce coarse grain mustards, like Doesburg, Groningen and the Zaanstreek area, all with a slight variation on flavor, coarseness and ingredients. It is a traditional item served with many of our foods: it's hard to imagine bitterballen or kroketten without mustard, or a gehaktbal on bread, without a generous lick of the creamy, dark yellow condiment.
Mosterdsoep is a velvety, creamy soup that tastes like, well, mustard. Select a coarse grain mustard if you can find it, preferably a Doesburgse or Zaanse Mosterd. If not, try something like Grey Poupon Harvest Coarse Ground mustard for a valid substitute. It is best with some crispy bacon garnish, and a slice of rustic bread.
Mosterdsoep
1 small leek
2 tablespoons butter
2 tablespoons flour
4 cups chicken or vegetable broth
4 tablespoons of coarse grain mustard


Wash and thinly slice the leek, white part only. Melt the butter in a pan and slowly sweat the vegetable. When it starts to release its lovely fragrance, stir in the flour to make a roux. Carefully continue to stir the butter and flour until it's come together, much like a paste, until it’s slightly golden. Now add the broth little by little, all the while stirring, making sure the roux incorporates all the liquid. Make sure there are no lumps. Bring to a boil, and boil for a good five minutes, until the soup thickens slightly. Turn down the heat to simmer, stir in the mustard and stir slowly until it dissolves. Taste. Adjust the flavor with some more mustard or a bit of salt if needed. 

Mosterdsoep can be served as is, or with some crispy bacon as a garnish.

Kibbeling

There are certain Dutch joys that cannot be explained, such as after bicycling home from school, a cup of hot split pea soup in your gloveless, cold hands. Or sitting on the cold shoulder on the side of the canal, taking a break from skating, with a mug of hot chocolate and a gevulde koek. Going to oma's on Sunday and smelling the groentesoep on the stove....... 

Just simple things that make you happy to be alive. Often it's the memories that make the food special. Sometimes food doesn't have any memories, but it just tastes good. Like today's kibbeling.

The last time I recall eating kibbeling was at a fish vendor's cart on one of the many beaches that Holland is rich. I can't remember which one, or what business it was. All I remember was the sun on my face, the slight salty breeze in my hair and a plate of hot, greasy fish nuggets on my lap. Bliss!

For the batter, you can use milk, sparkling water, or beer.  

A fairly modern development with kibbeling is the use of a spice mix. Most fish vendors will have their own personalized mix, but there are a few commercial mixes on the market. The main ingredients are salt, white pepper, paprika, ground mustard, curry powder, nutmeg, onion powder, and dried herbs, such as dill or parsley. If you can't find any on the market, see if you can get a start with those ingredients. Season a piece of fish, batter and fry it, and see how it tastes. It may take a few times to get the right mix per your preference. Or see if your favorite fish vendor will sell you some of his or her own mix - doesn't hurt to ask.

Kibbeling
2 lbs (1 kg) whiting or cod
1 cup (150 grams) flour
1/2 cup (125 ml) milk
1/2 teaspoon dried dill or parsley
1 teaspoon paprika powder
Pinch of onion powder, dried mustard, curry
or
Kibbeling spice mix (see above)
Pinch of salt and pepper

For the remoulade dipping sauce:
4 tablespoons mayonnaise
1 teaspoon capers, chopped
2 dill pickles, chopped fine
1 tablespoon fresh parsley, chopped

Oil for frying (canola, sunflower, peanut*)

Pt the fish dry on all sides. Cut it into two-inch pieces, and pat it dry again - this is important! Dust the pieces with the spice mix, then with a tablespoon of the flour. Make a thick batter with the rest of the flour and milk, salt, and pepper. Add a little bit of milk if it's too thick.

Heat your fryer to 350F or heat oil in a cast-iron pan on the stove. Try a little piece of fish first: dip it in the batter and fry until golden. Taste it and adjust the seasonings to your liking.

Put the rest of the fish in the batter, turn it over so that both sides are covered, and drop it in the hot oil, a few pieces at a time. Fry to a golden brown, remove from the oil, and place it on paper towels to drain the fat.

Mix the mayo with the capers, chopped pickles, and parsley. Taste. Adjust with salt and pepper if desired, and add a little bit of pickle juice if it's too thick.

Serve the pieces of kibbeling when they’re hot, and serve the dipping sauce on the side. Even kids will love the taste of this fried fish, so make plenty!

The most popular posts on this blog tend to be either sandwich-related or fast-food related: the broodjes post scores high, as well as the bitterballen and the frikandellen posts. The latter scores high on a list of its own, the Top Ten of Favorite Snacks (http://snacks.toptien.nl/), and is closely followed by the ultimate deep-fried gravy stick, the meat kroket.

Companies such as Van Dobben and Kwekkeboom, both food establishments in Amsterdam, are famous for their meat kroketten and have been offering this fried delicacy since the mid 1940sEach has their own following, and discussions about which kroket is superior is ongoing. Patisserie Holtkamp, one of the more sophisticated baked goods shops around town, also showcases kroketten, or in their case, croquetten, but has embraced a more varied flavor assortment: veal, cheese, sweetbreads/truffle and lobster. The Holtkamp shrimp croquet is their best-selling item.

Kroketten started as a great way to use up leftovers: Sunday's roast, or meat used to make soups, ended up in the meat grinder, then folded into a creamy thick gravy, after which it was refrigerated, rolled into logs, breaded and deep-fried to a beautiful golden bar. Meat kroketten are usually consumed with a good mustard, either by themself or on a white roll.

The cookbook from the Amsterdam Home Economics School, Kookboek van de Amsterdamse Huishoudschool, in its tenth edition from the 1940s, mentions a variety of croquetten: meat but also potato and shrimp, fish, sweetbreads, cheese and even macaroni. The spelling was fancier (the "c" and "q" were replaced by the more common "k" in later years) which also implied a more sophisticated presentation: according to the book, croquetten were to be deep-fried until golden, stacked in a pyramid-shape and served on a starched napkin with fried parsley for decoration.

Wow. Well, nowadays the meat kroket is usually served in a less charming manner: in a triangular paper cone or simply out of the wall on a paper tray, with no fried parsley or starched napkin in sight. And you'll be hard pressed to find a sweetbread kroket or a macaroni kroket in any of the establishments for supplying fatty foods such as the neighborhood snackbars or Febos.

But let that not stop us! Today we're making meat kroketten. The meat was first used to draw a beef stock for a vegetable soup, then shredded. You can also use leftover roast beef. If all you have is a pound of raw chuck roast or some other simmer meat, place the meat in a saucepan, add eight cups of water, half an onion, two peeled carrots and two chopped sticks of celery. Bring to a boil, then cover and simmer for two hours. Skim the broth, discard the vegetables and cool the meat.

Make sure you bread the kroket on all sides: one small crack and the filling will spill out into the fryer and cause a mess. You can also use this mixture for bitterballen. Once you get the hang of it, experiment with your own flavors. Leftover bbq beef? Go for it. A vegetarian version with a mushroom medley? Awesome! Just because Kwekkeboom, Holtkamp and Van Dobben come up with all kinds of flavors, doesn't mean you can't :-)

Kroketten
1 lb (450 grams) beef, cooked and chilled
1 cup (250 ml) milk or beef bouillon
6 tablespoons flour
1 tablespoon chopped parsley
1/8 teaspoon dried thyme
1/4 teaspoon  ground black pepper
1/2 teaspoon  salt
2 tablespoons (30 grams)  butter
2 eggs
1 cup panko or breadcrumbs

Shred the cooked meat and chop fine in a food processor, or by hand. Melt the butter in a pan, and stir in the flour. When the flour has soaked up all the fat, slowly pour in the milk or bouillon while continuing to stir. The flour will thicken the liquid and turn into a thick, creamy gravy. Stir at least one or two more minutes after the sauce has come together to get rid of some of the flour taste. Now add the tablespoon of chopped parsley, the pinch of pepper and salt and finally stir in the chopped meat. If the gravy is too thin, add another tablespoon of flour. Too thick? Carefully add a tablespoon of milk or broth to the mix and stir.

Spread this meaty mix on a baking sheet or a shallow plate, let it cool for about thirty minutes, then wrap and refrigerate it overnight.

Remove the roux from the fridge. Sprinkle some flour on the counter, divide the mixture into six equal pieces and roll each piece through the flour. Shape into tight logs, approximately 4 inches long and 1 inch wide. Your main concern will be to have kroketten approximately the same size. Wrap and refrigerate, while you prepare the rest.

Place three deep plates in a row. In the first one, put flour, the second one 2 beaten eggs, the third one, one cup of panko or breadcrumbs. Take the kroketten out of the fridge. With your dominant hand, lightly roll the kroket in the flour, then through the egg (make sure you cover the whole surface!) and finally through the breadcrumbs. Check to see that each area of the log is covered. Set aside while you repeat with the rest of the kroketten. Wrap and refrigerate while you heat up the oil.

Heat your fryer oil up to 375F. When it's ready, place one or two kroketten at a time in the hot oil and fry them until golden. This will take anywhere from 3-5 minutes. Take them out of the oil and let them drain on a couple of paper towels to get some of the fat off.

Serve hot. With or without fried parsley or a starched napkin, but do not forget the mustard!
