Just out of the blue thinking of the eierkoeken we used to get on a Saturday night, board games night in my childhood- hmm over 60 years ago..Surely going to try this recipe.Anonymoushttps://www.blogger.com/profile/00345557092286516402noreply@blogger.comtag:blogger.com,1999:blog-7144846758981844946.post-66425686459449196872020-01-23T15:41:42.046-07:002020-01-23T15:41:42.046-07:00Vanilla sugar... Both spread out way too much toward the end and fell flat. Not sure why it worked before? So....I reduced the sugar to 1/3 cup, and omitted the salt: not completely, but I took a pinch between thumb and index finger. (Sugar causes spread, and salt breaks down the eggs). With 2 eggs, 3/4 cup of self-rising, one envelope of vanilla sugar and a pinch of salt, I had great eierkoeken - but a little flatter than I wanted! Then I tried the baking powder recipe, but reduced it to 1 tsp per 3/4 cup flour and only a pinch of salt and got equally good results flavorwise. However, these eierkoeken had significantly more height. Both recipes worked fine after the alterations. I also found that working the flour into the eggs needed to be done carefully, by hand, and preferably within 10 strokes so as to keep most of the air. Hope this helps!Nicole Holtenhttps://www.blogger.com/profile/15000959283858308949noreply@blogger.comtag:blogger.com,1999:blog-7144846758981844946.post-78595890758996321762016-03-02T11:26:49.979-07:002016-03-02T11:26:49.979-07:00Thanks Nicole I will try them again to.Wil je ook ...Thanks Nicole I will try them again to.Wil je ook even laten weten dat ik je blog helemaal geweldig vind.yvonnehttps://www.blogger.com/profile/17207761353318186436noreply@blogger.comtag:blogger.com,1999:blog-7144846758981844946.post-15342395009736684472016-03-02T11:13:53.773-07:002016-03-02T11:13:53.773-07:00Thank you ladies!
